Red's Barbecued 'Coon Recipe

RED'S BARBECUED 'COON

1 (8 TO 10-lb.) raccoon, dressed 2 medium onions, chopped salt and pepper to taste Razorback Barbecue Sauce (hot or mild) Wash "coon and cut up. Cover with cold water in Dutch over. Bring to a boil for 15 minutes. Pour off this water and add fresh water, onions, salt, pepper and pepper pods. Boil 1 to 2 hours or until tender. Remove and dry on paper towels. Dip meat in barbecue sauce and place on hot grill for 45 minutes, basting frequently. Remove from grill and place in shallow pan. Pour sauce over meat and bake at 350 degrees for 1 hours.
